Meatless Monday: Spicy White Bean Veggie Wraps

This recipe is super easy & makes a great weeknight meal idea! 

Spicy White Bean Veggie Wraps (Servings: 4)

Ingredients:

  1. 1 Tbsp. extra virgin olive oil
  2. 1 bunch kale
  3. 1 15 oz. can white beans
  4. 2 garlic cloves
  5. sprouted grain tortilla wraps
  6. 1/2 c. shredded carrots
  7. 1/2 c. tomato, diced
  8. Just Mayo (Spicy or Chipotle)

Instructions:

Sautéed Vegetables
1. Heat a large skillet over medium heat. Add in 1 Tbsp. of oil. Add in the garlic and let cook until fragrant. 
2.  Add in the kale and white beans. 
3.  Toss around until kale is wilted and the white beans are heated throughout.
Wrap Assembly

1. Spread 1 Tbsp. of Just Mayo on the tortilla wrap.
2.  Top with the sautéed vegetables. 
3.  Add in carrots and tomato. 
4.  Wrap and serve with the some Just mayo on the side for dipping.
5.  Enjoy!
