      1. I have a recipe similar to the squash and quinoa one you posted. Sautee red and green peppers and garlic in olive oil. Fix the quinoa as directed and add salt and pepper to taste. Then stir it in and sautee with the veggies until coated. Scrape out the desired number of portabello caps and drizzle with olive oil. Put the mixture in the mushroom and bake at 350 for 20-30 minutes or until tender. It’s amazing I know you don’t eat dairy, but I add feta before I put it in the oven. You can also add different spices.

  1. Do you have any recommendations for good protein bars that I could eat in between meals? I wasn’t sure if you ate those or knew of some good ones. i have tried Luna, Clif, Kind, Lara, Balance, and some other ones. They seem to have a lot of vitamins and minerals that my body really needs. If you have any suggestions please let me know. Thanks.

  2. Hi there! Any advice on cellulite? I eat clean, lift heavy, but still have saddlebags with cellulite on them?!

    1. Most of the time cellulite develops as a results of body composition (i.e. Body fat %). In my experience, it typically reflects a diet that is higher in carbohydrates than protein. It can also develop/persist due to the amount of dietary fats. Start by tracking your macros (Protein/Carbohydrates/Fats). If your carbohydrate intake is more than 50% of your total daily caloric intake, that MAY be part of the problem. Some of us perform cardio early in the morning (on an empty stomach) to BURN FAT and reduce the appearance of cellulite. I hope this helps!

  4. I am interested in knowing how you get a reasonable amount of protein being a vegan. I’m vegetarian and my trainer keeps telling me I will not get enough gains because I can’t get in enough protein from a plant based diet.

    1. Lizzy, I eat Explore Asian’s black bean spaghetti, quinoa, nuts, and I supplement with Garden of Life Raw Fit protein powder! On average, I consume over 100 gms of protein/day.

  6. Hi, there. I am currently pregnant with my second child and am seriously thinking about eating vegan once the new baby arrives. I am so delighted to have found your site—you look AHHHHHH-MAZING! I, myself competed in my first figure competition back in the fall of 2013 (I became pregnant with our first baby 4 days later, lol)! I have my mind set on competing again after second baby and as a vegan and I’d love to know if you or anyone you know offers vegan competition prep—meal plans and/or workouts? I have a looooong way to go to become stage ready again. Regardless, thank you so much for your inspiration!

I am currently a 2nd year medical student at USC School of Medicine and I’ve been working really hard to maintain my fitness routine and healthy meal plans.   9. I’m looking to possibly go vegan but have some reservations (general and specific to me). Do you do consultations or have some type of other forum where people may ask you multiple questions about your experience in becoming a vegan athlete?

    1. Rhoni, I do not offer consultations unless you are in Charlotte (or in NC) and are willing to see me in the office as a patient (because I am a physician, I do not offer advice without an established doctor/patient relationship). I have several websites I can recommend though:

  11. Hi! I just saw the article on you on vegan bodybuilding. You look amazing! I am 44 & did my first bikini competition 2 years ago. (Vegan 8 years now). I don’t have plans to do any more but am not happy with my body & seem to be struggling with the body fat. Would you be willing to share the name of your first vegan trainer that helped you when you were unhappy with your physical appearance. You said in 3 months you saw changes. I may need guidance like that. Any contact info you have would be greatly appreciated! I am in Columbia but can’t find any vegan nutritionalists or trainers here. Thank you very much.

    1. What specialty? There is a vegan cardiologist in Charlotte (Dr. Alegria), I’m now a concierge physician with Lifetime Proactive Care (inside of the new Lifetime Athletic Charlotte). I don’t know any other plant based MDs in Charlotte.

      1. Terri, you do not have to be a member to use the clinic at Lifetime however, a corporate decision was recently made to close the clinical space. Therefore, I am in the process of opening my own concierge medical office. As a past patient, I was saddened by you leaving Carmel Family Physicians. I truly miss your advice in many areas… But I understand you’re on a wonderful Life Journey.     1. Gina, we are in the process of rebranding the clinic to align with the core concepts of Lifetime Athletic. Once all of the new services have been determined, the the clinic reopen as a Sports Medicine, Recovery, and Performance Center of Excellence. I anticipate that will be in August 2018
